This is the recipe I made last night. I did some modifications such as using only one TBS bacon fat and I cut the olive oil in half. This recipe was worth every bit of effort

Too Much Weekend!
Saturday morning we hit the ground running and didn't stop all weekend. We had a healthy Saturday breakfast and then did a circuit training workout. My husband is my biggest supporter!
We went to the botanical gardens and walked around. There was an art show going on and the weather was beautiful. I got a good 2 hours of walking in.
We signed our taxes. BOO! and then decided to have Chick Fil A for lunch. I had the grilled chicken sandwich with fruit as my side.
The weather was so nice we decided to grill. I made chicken sate and an asian slaw. I also served some dumplings on the side. While the chicken cooked I had a cosmopolitan on the patio. What a way to end a perfect Saturday.
Sunday was spent going to the garden center and then planting. I am doing tomatoes in containers this year. It is an experiment. I am hoping that I get lots of great tomatoes this season! If not, the Farmers Market is right around the corner.
I decided to make cuban black beans for dinner. I found an authentic cuban recipe which included making a Sofrito. You cook the beans with a ham hock and then cook some bacon in a skillet. I added chopped green peppers, onions and lots of garlic to the pan after the bacon was cooked. Once the veggies are cooked and browning you add vinegar to deglace. This is added to the beans along with some spices and a tablespoon of brown sugar.
These were the best beans I have ever had. I am now addicted. The recipe did take some time but it was well worth the effort.
I felt good at the end of this weekend. I didn't over eat, I was very active and unlike many weekends in my past, I had no guilt at the end of it.
